Mortadella is a large Italian sausage or cold cut made of finely ground heat-cured pork. It is delicately flavored with spices, including whole or ground black pepper, myrtle berries, nutmeg, coriander and pistachios. Mortadella is a pillar of Italian cuisine and it has been served in Italy for centuries: the Romans called the sausage "farcimen mirtatum" (myrtle sausage), because the sausage was flavored with myrtle berries.

Try serving it diced as an apetizer: it is divine when combined with with semi-soft cheese.
