Product Description
Cotechino is a fresh sausage made from pork, fatback, and pork rind. It comes from Modena, where it has the PGI status.


Cotechino dates back to around 1511 and it was born out of necessity: the people of Gavello (a small town next to Modena), whilst besieged, had to find a way to preserve meat and use the less tender cuts, so they created Cotechino.


As it is often the case, out of necessity come some of the best products ever!


Cotechino needs to be boiled in hot water before serving and the instructions on the package will guide you easily through the process.


Traditionally served with lentils, spinach and polenta, Cotechino is one of the most pouplar Christmas dishes.
