Salame Felino is a pure pork salame from Felino, a small town located in the green Baganza valley, next to Parma.
This unique salame is the result of the best pork meat being aged in the particular microclimate of its area of origin, where the right amount of humidity and ventilation play a key role.
The fresh meat used to make the salame is carefully selected from deboned pork shoulder and belly.
Once the meat is coarsely ground, salt, whole peppercorns and white wine are added.
The salame is then stuffed by hand into a pork casing, which gives it its characteristic uneven width.
The Salame Felino is then aged slowly until it achieves its characteristic gentle flavour and delicate aroma.
