Home-made Spaghetti with Bottarga
8 minutes | serves 4
500 Gr Fresh Spaghetti
4 teaspoons grated Bottarga
40 Gr piece of Bottarga
80 Ml Extra Virgin Olive Oil
3 garlic cloves, not peeled
Grated lemon skin
Fresh basil leaves
0.12 Gr Saffron powder
Salt
With the help of an electrical blender, crush some fresh basil leaves and mix them with some extra virgin olive oil.
Aside, heat some olive oil in a pan and warm the garlic cloves and the grated lemon skin.
Add the basil and olive oil mix in the pan and mix for 30 seconds. You have to be quick!
Add the grated bottarga and mix for an other 30 seconds. Again, make sure you do this quickly!
Meanwhile, having put salt and saffron powder in a pan of boiling water and having cooked the spaghetti in that water for a few minutes, drain the spaghetti in a colander.
Toss the spaghetti with the sauce and grate some more bottarga and lemon skin over the pasta and serve immediately.
